It Started, Quite Simply, Like This...
Established in 2012, The Dirty Buffalo is family-owned and operated by Western New York native Russell Gilbert. Russ grew up in a small town outside Rochester, New York before moving to Buffalo where he met his wife Stephanie. The couple spent several years shoveling snow and chowing down on the City of Good Neighbors' iconic fare before heading south to Virginia in 2005. Upon arrival in the Hampton Roads area, Russ and Steph relished in the bright sunshine and friendly people, but noted two things that the region seemed to lacking: (1) a restaurant featuring authentic Buffalo-style chicken wings; and (2) a late-night food establishment where students and other night owls could enjoy freshly-prepared, homestyle meals after 11 PM.
After growing up in the restaurant industry, Russ could only think of one solution to this perceptible void. So while he finished his marketing degree at ODU, he set to work on creating a late-night, quick-service restaurant featuring his own interpretation of his favorite Western New York dishes. The Dirty Buffalo opened in March 2012, originally staying open as late as 4 AM and offering its full menu of wings, hoagies, Dirty Plates, and homestyle sides into the wee hours of the morning. Since then, the restaurant has grown exponentially, and the late-night hours had to be temporarily phased out due to lack of capacity. The Dirty Buffalo continues to grow, frequently adding new housemade sauces to its ever expanding selection and recently updating its drink menu to include wine, liquor and several specialty drinks. The restaurant continues to serve its full menu until midnight every Friday and Saturday and each week features an inspired "special sauce" for "Wednesday Wing Night," when our award-winning jumbo wings are just $.60 each.
